The De Palma Agricultural Company was founded in 2001 and extends over 70 hectares characterized by the prevalent presence of olive groves and almond groves at an altitude of 300 m above sea level on the hills west of Bari and boasts a long tradition in the olive oil sector : the prevalent cultivar is the typical Coratina, the Ogliarola Barese also has a strong presence, in addition to the Peranzana and the Leccino.
The company follows all phases of the production chain with scrupulous attention in order to obtain the highest quality of the product in complete respect of nature.   The cultivation techniques adopted do not use any type of pesticides and fertilizers, thus guaranteeing a 100% organic product controlled and certified by Icea according to European regulation 2018/848.
 Our production boasts two fundamental foods for the Mediterranean diet: extra virgin olive oil and almonds.
 To obtain our monovarietal oils we select the best olives, we generally harvest them in October and we grind them in the immediate following hours.   The choice of the latest generation MORI-TEM crusher is not random, as it allows us to process at a controlled temperature between 19-20°, knead the dough in the absence of oxygen and perfectly clean the kneaders.   The management of oxygen at the entrance to the crusher characterizes the processing and constitutes a fundamental factor in the formation of lipoxygenase which contributes markedly to the characterization and differentiation between different cultivars.
 The oil is always filtered upon exiting the extractor to eliminate all residues that could compromise the quality of the product over time.
 The result is an extra virgin olive oil characterized by low acidity (0.26), a high number of polyphenols and a low number of peroxides.
 In addition to chemical analyses, we also give maximum importance to sensorial analysis for evaluating the quality of extra virgin olive oil.
Our team is in fact made up of virgin and extra virgin olive oil tasters recognized by the Puglia Region (Italy) to guarantee a high quality product.
 Our choice of monovarietal stems from the aim of enhancing the typicality and identity of the cultivar itself, with well-defined characteristics of flavour, color and aroma.
 The variety of native plant typical of the Bari area.   Coratina boasts an extremely low acidity rate (therefore resistant to oxidation for longer) and an extremely high quantity of polyphenols, three times greater than other cultivars, fundamental in the fight against free radicals.
 It is so valuable that it is used by many producers to correct low quality oils.
De Palma pure organic Coratina is a precious oil with an extraordinary and unique organoleptic profile: it has a full and enveloping aroma rich in notes of freshly cut grass and artichoke.
 In the mouth it has a large vegetal load, with nuances of chicory, almond and lettuce.
The quality of our product also depends on its conservation.   It is stored in tanks that eliminate oxygen and introduce nitrogen, to perfectly maintain the extra virgin olive oil.



The Toritto countryside, located in the hinterland of Bari (Puglia), is known for the quality of the almond which is present in the Genco and Tuono varieties and in the cultivar most appreciated for its aroma and taste, Filippo Cea.
The Toritto almond, recognized as one of the best almonds in the world, is a Slow Food Presidium.   Famous for the sweetness of its seed and the excellent aromatic notes, it is considered indispensable in high-end pastry products.
 It represents a true natural supplement, because it is rich in group B and E vitamins and a daily intake of 15-20 almonds is recommended.
 They also have an antioxidant action thanks to the presence of tocopherol and help the cardiovascular system due to the presence of phytosterols that fight cholesterol.
