I make, in an artisanal way, by hand with my rolling pin and my roulette, our family recipe for Cuggiulelle, which was handed down to me and informed by my grandmother. Cuggiulelle are Corsican biscuits from Balagne, more precisely from Calenzana and Zilia. It's a very addictive cookie (according to feedback from people who have tasted them) and different from Canistrelli, the more popular cousin. From my grandmother's recipe, I developed other recipes, sweet and savory,
and today, I offer a range of amaretti and breadsticks.
