Les VELOURS de l'ABBAYE were born from the desire of Victor GAYET and François de REGLOIX, artisan vinegar makers, epicureans, lovers of France, its terroirs and its gastronomy and their desire to cook natural and gourmet vinegars.
In VELOURS de l’ABBAYE vinegars, there are no artificial flavors, no colorings, no preservatives. The essential ingredients in our recipes are of French, local origin and mostly from organic farming.
The ingredients are carefully selected to guarantee vinegars with exceptional gastronomic qualities where tangy aromas blend with the flavors of fruits and spices.
"The vinegars we produce come from the natural fermentation of organic apple juice or grapes which are transformed into cider and wine then into vinegar."
Cooking in a cauldron or cold maceration, so many traditional processes used by Victor and François to enhance their selection of vinegars and give them finesse and power.
