Small miracles of flavor sometimes arise from crazy mistakes. A forgotten ingredient, an experiment gone wrong, an idea that takes on a life of its own: while their genesis varies, many recipes were born from a fortunate coincidence.
It was an evening in December, Brigitte was preparing Christmas cookies but lost in her thoughts she forgot an ingredient.
Aware of her mistake, she set aside the dough she had just formed to work with later.
The next day, she made small piles and put them in the oven.
The magic worked, they swelled and looked strangely like the volcanic rock found in Auvergne.
Sweet pozzolana was born!
Brigitte is now retired. The adventure continues in the Puy-de-Dôme region, more precisely in Châtel-Guyon.
Frédérique and Richard took over the business in March 2022.
